So I was over at my friend’s house the other day and I saw her eating a frozen peach. At first I thought it was a little weird, but as it turns out, she’s onto something.
A lot of fruits and vegetables are imported during the winter months. Even if your produce is “organic,” it’s most likely grown in Chile or Mexico and ✈ shipped over. While farmer markets are ideal, it can be challenging to find your favorite fruits and veggies when they’re not in season.
Freezing your produce the moment after they have been picked will actually freeze the nutrients. While canned foods tend to lose a lot of nutrients during the preservation process, frozen vegetables may be even more healthful than some fresh produce sold. (The amount of sodium in canned food is so gross!)
When you’re ready to eat them, steam (microwave if you have to) rather than boil your produce to minimize the loss of water soluble vitamins. Unless you’re like my friend and like to eat them frozen…
If you can get your produce locally and fresh right when it’s picked, that’s most ideal, but freezing as opposed to canned or imported produce is a much healthier and environmentally friendly way to enjoy foods during the winter months when fresh produce is hard to come by. #VegansofIG
